INGREDIENTS:
Yields 5 veggie fritters
3 cups of grated—combination of Carrot, Purple Cabbage, Savoy Cabbage and Potatoes.
1/4 cup Potato Starch
1 tsp Smoked Paprika
1/4 tsp Sea Salt
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1 tbsp Water
- Grate 3-4 Carrots, 1/2 small head Purple Cabbage, 1/2 small head Savoy Cabbage and 3-4 small Potatoes (washed and cleaned, you can keep the peel on for the young Potatoes)
- Mix all the ingredients in a bowl until the mixture feels binding under your hands, ready for the veggie fritters to be formed.
- Fry the Veggie Fritters on the non-stickable ceramic pan, on the stove top with some Coconut Oil. When frying make sure at the start you have the heat on med high for a minute and then lower the heat and cover the frying pan with a lid for 5 minutes or so to have heat penetrate thoroughly and then flip the Veggie Fritter and repeat the same process on the other side until the both sides look golden brown.
- Serve with a side Salad and Avocado Dip of choice.
