Veggie Fritters


Yields 5 veggie fritters

3 cups of grated—combination of Carrot, Purple Cabbage, Savoy Cabbage and Potatoes.
1/4 cup Potato Starch
1 tsp Smoked Paprika
1/4 tsp Sea Salt
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1 tbsp Water

  1. Grate 3-4 Carrots, 1/2 small head Purple Cabbage, 1/2 small head Savoy Cabbage and 3-4 small Potatoes (washed and cleaned, you can keep the peel on for the young Potatoes)
  2. Mix all the ingredients in a bowl until the mixture feels binding under your hands, ready for the veggie fritters to be formed.
  3. Fry the Veggie Fritters on the non-stickable ceramic pan, on the stove top with some Coconut Oil. When frying make sure at the start you have the heat on med high for a minute and then lower the heat and cover the frying pan with a lid for 5 minutes or so to have heat penetrate thoroughly and then flip the Veggie Fritter and repeat the same process on the other side until the both sides look golden brown.
  4. Serve with a side Salad and Avocado Dip of choice.
