Day 5: Easy-to-make potato patties will comfort and fulfill!
2 pound Potatoes such as Yukon Gold
1/4 cup Potatoes Starch
1-2 tbsp Coconut Butter
Potato Patties PREPARATION:
- Peel, then boil/steam Potatoes until soft.
- Discard the Potatoes from the cooking water and mash; let the mashed potatoes cool for 30 minutes.
- Ones the mashed potatoes are cooled, knead the potatoes with hands until start taking hold of molding similar to play dough. Take approximately a handful (1/3 cup) of kneaded potatoes in your hands, dust with Potato Starch and roll it on the surface of a plate into a long cylinder and swirl it into a circle.
- Heat about 1 tsp of Coconut Oil in the non-stick pan on medium low heat on the stove top. Add the Potatoes Patties and fry on each side until just lightly golden brown, for approximately 5 minutes on each side.
Ready to serve on its own, or with a dip and veggies, with a salad or with a soup.
