Day 5: Easy-to-make potato patties will comfort and fulfill!

INGREDIENTS:

2 pound Potatoes such as Yukon Gold
1/4 cup Potatoes Starch
1-2 tbsp Coconut Butter

Potato Patties

Potato Patties PREPARATION:

  1. Peel, then boil/steam Potatoes until soft.
  2. Discard the Potatoes from the cooking water and mash; let the mashed potatoes cool for 30 minutes.
  3. Ones the mashed potatoes are cooled, knead the potatoes with hands until start taking hold of molding similar to play dough. Take approximately a handful (1/3 cup) of kneaded potatoes in your hands, dust with Potato Starch and roll it on the surface of a plate into a long cylinder and swirl it into a circle.
  4. Heat about 1 tsp of Coconut Oil in the non-stick pan on medium low heat on the stove top. Add the Potatoes Patties and fry on each side until just lightly golden brown, for approximately 5 minutes on each side.

Ready to serve on its own, or with a dip and veggies, with a salad or with a soup.
